Tzatziki Sauce

Ingredients

  • ½ block (8 oz.) Organic Soft San Diego Soy Dairy Tofu
  • ½ cup unsweetened soy milk
  • 2 tablespoons lemon juice
  • 1 tablespoon dried dill weed or ½ cup loosely packed fresh dill weed
  • 1 tablespoon tamari, shoyu, Braggs, coconut aminos or soy sauce
  • Dash black pepper
  • Dash paprika
  • 1-2 teaspoons maple syrup
  • 1 tablespoon nutritional yeast
  • 2 tablespoons fresh parsley
  • ½ cup cucumbers finely chopped

Instructions

  • Blend all the ingredients except pickles until smooth. Fold in the cucumbers. Chill for at least 10 minutes before serving.
