Tofu Scramble


  • 1 package organic firm tofu
  • 1 teaspoon dried parsley flakes
  • 1⁄2 teaspoon ground turmeric
  • 1⁄4 teaspoon sea salt
  • 1⁄4 teaspoon ground black
  • 2 tablespoons canola oil
  • 1⁄2 medium onion chopped
  • 1 clove garlic, minced
  • 1/2 red bell pepper cut into strips
  • 1⁄2 medium zucchini, sliced into half rounds
  • 1⁄2 cup broccoli florets


  • Combine the parsley, turmeric, salt, and pepper in a small dish.
  • Heat the oil in a medium skillet. Add the onion and garlic and cook and stir until they are tender. Add the red bell pepper, zucchini, and broccoli florets and stir until they are soft.
  • Crumble the tofu into the skillet and sprinkle with the parsley mixture. Cook and stir over medium heat until hot throughout.
