Creamy Miso Asian Vinaigrette

Ingredients

  • 3/4 cup Organic Soft San Diego Soy Dairy Tofu
  • 3 tablespoons apple cider vinegar
  • juice of 1 lemon
  • 1 tablespoon white miso
  • 2 cloves garlic
  • 2 teaspoons grated ginger
  • 2 teaspoons umeboshi paste
  • 2 teaspoons maple syrup
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon sea salt
  • 1/2 cup olive oil
  • 3-4 tablespoons water

Instructions

  • Place all ingredients except the oil and water into a blender jar and blend on high speed. Slowly add the oil until the mixture thickens, gradually add the water until a desired consistency is reached.
