Creamy Cilantro Peppita Dip & Dressing

  • 1 pound Organic Soft San Diego Soy Dairy Tofu
  • 3/4 cup organic canola or safflower oil
  • 1/4 cup water
  • 1/4 cup red wine vinegar
  • juice of 2 limes
  • 3 cloves garlic
  • 2 medium Anaheim chilis roasted, peeled and seeded
  • 1 bunch cilantro, stems removed
  • 3/4 cup pepita seeds
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper


  • Place the tofu, oil, water, vinegar and lime juice in the jar of a blender and blend on high until smooth. Reduce the speed to low and add the garlic, chilis, cilantro, pepitas, salt and pepper. Blend until combined. Gradually add up to 1/4 cup more water to reach a desired consistency for dressing. Adjust seasonings to taste.
