2 medium Anaheim chilis roasted, peeled and seeded
1 bunch cilantro, stems removed
3/4 cup pepita seeds
1 teaspoon sea salt
1/2 teaspoon ground black pepper
Place the tofu, oil, water, vinegar and lime juice in the jar of a blender and blend on high until smooth. Reduce the speed to low and add the garlic, chilis, cilantro, pepitas, salt and pepper. Blend until combined. Gradually add up to 1/4 cup more water to reach a desired consistency for dressing. Adjust seasonings to taste.
